Crispy Tortilla Egg Quesadillas

4 large flour tortillas

4 large eggs

1 cup shredded cheese (cheddar or pepper jack works great)

1/2 cup diced bell peppers (any color)

1/4 cup chopped green onions

1/4 cup cooked and crumbled chorizo (optional)

1/4 tsp smoked paprika

Salt and pepper, to taste

2 tbsp butter (divided)

Salsa, guacamole, or sour cream (for serving)

Instructions
 

Prepare the Filling:

    In a mixing bowl, crack the eggs and whisk until fully mixed. Add in the diced bell peppers, green onions, cooked chorizo (if using), smoked paprika, salt, and pepper. Mix well to combine.

      Cook the Eggs:

        In a large non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour the egg mixture into the pan and let it sit for about 1-2 minutes. Stir occasionally until the eggs are scrambled and just set, about 4-5 minutes. Remove from heat and set aside.

          Assemble the Quesadillas:

            Lay one tortilla flat on a clean surface. Sprinkle about 1/4 cup of cheese over half of the tortilla. Spoon a generous amount of the scrambled egg mixture on top of the cheese, then sprinkle another 1/4 cup of cheese on top of the eggs. Fold the tortilla in half to create a semi-circle.

              Cook the Quesadillas:

                In the same skillet, melt another tablespoon of butter over medium heat. Place the folded quesadilla in the skillet, cooking for about 3-4 minutes on one side until golden and crispy. Carefully flip the quesadilla, adding the remaining tablespoon of butter to the skillet, and cook for another 3-4 minutes on the other side until it’s equally crispy and the cheese is melted.

                  Serve:

                    Remove the quesadilla from the skillet and let it cool slightly. Cut into wedges and serve with your choice of salsa, guacamole, or sour cream on the side.
