1 lb (450g) fresh salmon fillet, skinless and deboned

1/4 cup soy sauce (preferably low-sodium)

2 tbsp mirin (Japanese sweet rice wine)

2 tbsp honey or maple syrup

1 tbsp rice vinegar

2 cloves garlic, minced

1 tsp fresh ginger, grated

2 tbsp cornstarch

2 tbsp vegetable oil (for frying)

1 tbsp sesame seeds (for garnish)

2 green onions, thinly sliced (for garnish)

Instructions
 

Prepare the Teriyaki Sauce: In a small saucepan over medium heat, combine soy sauce, mirin, honey (or maple syrup), rice vinegar, minced garlic, and grated ginger. Bring to a gentle simmer and allow it to reduce for about 5-7 minutes, until slightly thickened. Remove from heat and set aside.

    Cut the Salmon: While the sauce cools, cut the salmon fillet into uniform 1-inch cubes. This ensures even cooking and helps achieve that crispy texture.

      Coat the Salmon: In a shallow bowl, add the cornstarch. Lightly toss each salmon cube in the cornstarch, ensuring they are well-coated. Shake off any excess.

        Fry the Salmon: Heat vegetable oil in a large non-stick skillet over medium-high heat. Once hot, add the coated salmon cubes in a single layer, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. You may need to do this in batches.

          Add the Sauce: Once all salmon cubes are crispy, reduce the heat to medium-low. Pour the teriyaki sauce over the salmon in the skillet, gently tossing to coat. Cook for an additional 1-2 minutes, allowing the sauce to stick to the fish.

            Serve: Remove from heat and transfer the teriyaki salmon cubes to a serving dish. Sprinkle with sesame seeds and sliced green onions for garnish. Serve immediately over cooked rice or alongside a fresh salad.
