1 cup corn (fresh, canned, or frozen)

1 cup cherry tomatoes, halved

1 cup shredded cheese (cheddar, Monterey Jack, or a vegan alternative)

1 avocado, diced

1/2 cup pickled jalapeños (optional)

Fresh cilantro, for garnish

Salsa or hot sauce, for serving

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Slice them into thin rounds (about 1/4 inch thick) to ensure they become crispy when baked.

      Season the Sweet Potatoes: In a large mixing bowl, toss the sweet potato slices with olive oil, paprika, garlic powder, cumin, salt, and pepper until evenly coated.
