For the Shrimp Balls:

1 pound (450g) raw shrimp, peeled and deveined

1/2 cup breadcrumbs, plus extra for coating

1/4 cup chopped green onions

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon fish sauce

1 tablespoon cornstarch

1 egg, lightly beaten

Salt and pepper, to taste

Vegetable oil, for frying

For the Sweet Chili Sauce:

1/2 cup sweet chili sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon lime juice

Optional: 1-2 teaspoons chopped fresh cilantro for garnish

Instructions
 

Prepare the Shrimp Mixture:

    - In a food processor, add the peeled and deveined shrimp. Pulse until coarsely chopped but not pureed.

      - To the processed shrimp, add the breadcrumbs, green onions, minced garlic, grated ginger, fish sauce, cornstarch, and beaten egg. Season with salt and pepper. Pulse a few times until combined.

        Shape the Balls:

          - With slightly wet hands, form the shrimp mixture into small balls, about 1 inch in diameter. Roll in additional breadcrumbs to coat evenly.

            Heat the Oil:

              - In a deep frying pan or wok, heat about 2-3 inches of vegetable oil over medium-high heat until hot (approximately 350°F/175°C).

                Fry the Shrimp Balls:

                  - Carefully add the shrimp balls to the hot oil, working in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and cooked through, turning occasionally for even coloring.

                    - Using a slotted spoon, transfer the fried shrimp balls to a plate lined with paper towels to drain excess oil.
