1 lb ground beef or turkey

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning (store-bought or homemade)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

8 small flour or corn tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheddar cheese

½ cup sour cream or plain Greek yogurt

1 avocado, sliced

Cooking oil (for frying)

Salt and pepper to taste

Cook the Meat: In a medium skillet, heat a drizzle of cooking oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant. Stir in the ground beef or turkey, breaking it apart with a spatula. Cook until browned and cooked through, about 6-8 minutes. Drain any excess grease.

    Season the Meat: Sprinkle the taco seasoning over the cooked meat and mix well. Add the rinsed black beans and corn kernels, stirring to combine. Season with salt and pepper to taste. Cook for another 3-4 minutes, until heated through. Remove from heat and set aside.

      Prepare the Tortillas: In a separate skillet, heat a small amount of oil over medium-high heat. Fry the tortillas one at a time for 30 seconds on each side until crispy but still pliable. Drain on paper towels to remove excess oil. Repeat with all tortillas.
