Crispy Ranch Cauliflower Tots

1 medium head of cauliflower, cut into florets

1 cup sharp cheddar cheese, shredded

1/2 cup Panko breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 tablespoons ranch seasoning mix

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper, to taste

Cooking spray or olive oil for baking

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Steam Cauliflower: In a large pot, bring about an inch of water to a boil in a steamer basket. Add the cauliflower florets, cover, and steam for about 8-10 minutes, or until tender. Remove from heat and let cool slightly.

      Mash Cauliflower: Transfer the steamed cauliflower to a large mixing bowl. Use a potato masher or fork to mash it until smooth. Make sure to remove excess moisture by pressing it in a clean kitchen towel or using the masher.

        Mix Ingredients: Add the shredded cheddar cheese, Panko breadcrumbs, grated Parmesan, egg, ranch seasoning, garlic powder, onion powder, salt, and pepper to the mashed cauliflower. Mix until well combined.

          Form Tots: Using your hands, shape the mixture into small tot-shaped pieces and place them on the prepared baking sheet.

            Bake: Lightly spray the tots with cooking spray or drizzle with olive oil. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy. Flip them halfway through baking for even crispiness.
