2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika (optional)

Salt and pepper to taste

2 large eggs, beaten

Olive oil spray (or extra virgin olive oil for drizzling)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. This will prevent sticking and promote even crisping.

    Prepare the Zucchini: Wash and dry the zucchinis, then slice them into thin rounds, about 1/4-inch thick. You can also cut them into sticks for a different shape, but rounds tend to crisp up nicely.

      Set Up Dredging Station: In one bowl, place the beaten eggs. In another bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika (if using), salt, and pepper.

        Coat the Zucchini: Dip each zucchini slice into the beaten egg, allowing excess to drip off. Then, coat it in the Parmesan-breadcrumb mixture, pressing gently to ensure the coating sticks well. Place the coated slices on the prepared baking sheet in a single layer.
