2 large sweet potatoes

Preheat the Oven: Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper for easy cleanup.

    Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Using a mandoline slicer or a sharp knife, slice them very thinly (about 1/8 inch thick) for optimal crispiness.

      Toss the Slices: In a large bowl, combine the sweet potato slices with olive oil, garlic powder, paprika, cayenne pepper (if using), and sea salt. Toss gently until all slices are evenly coated.
