Ingredients

4 large ears of corn

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional, for heat)

½ teaspoon salt

¼ teaspoon black pepper

1/4 cup fresh parsley, finely chopped (for garnish)

1/4 cup olive oil

1-2 tablespoons of ranch seasoning (optional, for extra flavor)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Corn: Carefully cut the corn kernels off the cob using a sharp knife. For a unique presentation, keep the cob halves intact. Stand each ear of corn upright and slice downwards to create 'ribs' by cutting through the corn from top to bottom. Each ear should yield about 4-6 ribs.

Make the Coating: In a mixing bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Mix thoroughly to ensure the flavors are well distributed.

Coat the Corn Ribs: In a separate bowl, drizzle olive oil over the corn ribs, ensuring they are well coated. Then, dip each corn rib into the Parmesan and breadcrumb mixture, pressing lightly to make sure the coating adheres well. Lay the coated corn ribs on the prepared baking sheet.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the ribs are golden brown and crispy. For an extra crispy finish, you may broil them for an additional 2-3 minutes at the end, but keep an eye on them to prevent burning.

Finishing Touches: Once out of the oven, sprinkle fresh parsley on top for a pop of color and extra flavor. If desired, dust a little ranch seasoning over the top for an extra tangy twist.

Serve and Enjoy: Serve the crispy Parmesan corn ribs warm, with your favorite dipping sauce or a squeeze of fresh lemon juice to enhance the flavors.
