1 lb (450g) large portobello or cremini mushrooms

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

1/2 tsp paprika

Salt and pepper, to taste

Olive oil spray or 2 tablespoons of olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Mushrooms: Clean the mushrooms with a damp cloth and remove the stems. If using portobellos, slice them into thick fries (about 1/2 inch thick). For smaller cremini mushrooms, you can slice them in half or leave them whole.

      Set Up the Dredging Station: In three separate shallow bowls, place the flour in one, the beaten eggs in the second, and mix the breadcrumbs, grated Parmesan, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper in the third.

        Coat the Mushroom Fries: Begin by dipping each mushroom slice into the flour, ensuring it's fully coated. Shake off any excess flour, then dip it into the egg mixture, allowing any excess to drip off. Lastly, roll the mushroom in the breadcrumb-Parmesan mixture, pressing gently to ensure a good coating.

          Arrange on Baking Sheet: Place the coated mushroom fries in a single layer on the prepared baking sheet. If desired, lightly spray them with olive oil to help them crisp up in the oven.

            Bake the Fries: Bake in the preheated oven for 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.

              Garnish and Serve: Once baked, remove the mushroom fries from the oven and let them cool slightly. Garnish with freshly chopped parsley and serve warm with your favorite dipping sauce, like marinara or a garlic aioli.
