12 fresh jalapeño peppers

1 cup cream cheese, softened

1 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and pepper, to taste

1 cup all-purpose flour

2 large eggs, beaten

2 cups panko breadcrumbs

Oil for frying (vegetable or canola)

Prepare the Jalapeños: Preheat your oven to 400°F (200°C). Cut the jalapeño peppers in half lengthwise and remove the seeds and membranes (for less heat, leave some seeds intact).

    Make the Filling: In a mixing bowl, combine the softened cream cheese, sharp cheddar cheese, mozzarella cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.

      Stuff the Peppers: Spoon the cheese mixture generously into each jalapeño half, pressing slightly so the filling stays in place.

        Coat the Peppers: Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dredge each stuffed jalapeño first in the flour, then dip in the beaten eggs, and finally coat with panko breadcrumbs, pressing gently to make sure the breadcrumbs adhere well.

          Fry the Poppers: In a large skillet, heat about 1 inch of oil over medium heat. Once hot, carefully add the breaded jalapeño poppers (in batches if needed) and fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

            Bake (Optional): For a healthier version, you can place the breaded jalapeños on a baking sheet lined with parchment paper and spray lightly with cooking spray. Bake in the preheated oven for about 20 minutes, or until golden and crispy.
