Crispy Feta Eggplant Bites

1 large eggplant, cut into bite-sized cubes

200g feta cheese, crumbled

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Olive oil, for frying

Optional: balsamic glaze for drizzling

Prepare the Eggplant:

    - Start by preheating your oven to 400°F (200°C).

      - Place the cubed eggplant in a colander and sprinkle with salt. This helps draw out excess moisture and bitterness. Let it sit for about 30 minutes, then rinse and pat dry with paper towels.

        Set Up Breading Station:

          - In one shallow bowl, place the flour mixed with salt, pepper, garlic powder, and paprika.

            - In a second bowl, beat the eggs until well combined.

              - In a third bowl, add the panko breadcrumbs mixed with a pinch of salt and a drizzle of olive oil (to help them brown).

                Coat the Eggplant:

                  - Dip each eggplant cube first into the flour mixture, shaking off any excess.

                    - Next, dip it into the beaten eggs, allowing the excess to drip off.
