For the Falafel:

1 cup dried chickpeas, soaked overnight

1 small onion, roughly chopped

3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 teaspoon cumin

1 teaspoon coriander

1/2 teaspoon baking powder

Salt and pepper, to taste

Oil for frying (canola or vegetable)

For the Salad:

4 cups mixed greens (spinach, arugula, and romaine)

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1/2 red bell pepper, diced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled (optional)

1/4 cup tahini dressing (store-bought or homemade)

For Homemade Tahini Dressing (optional):

1/3 cup tahini

2 tablespoons lemon juice

1 tablespoon olive oil

1 clove garlic, minced

Water to thin

Salt, to taste

Instructions
 

Prepare the Falafel Mixture:

    - Drain the soaked chickpeas and add them to a food processor along with the chopped onion, minced garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is combined but still slightly chunky—avoid making it a paste.

      Shape the Falafel:

        - Form the falafel mixture into small balls or patties, about 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

          Heat the Oil:

            - In a deep skillet or fryer, heat about 2 inches of oil over medium heat until hot (350°F or 175°C). You can test the oil by dropping in a small piece of the falafel mixture; it should sizzle and float.

              Fry the Falafel:

                - Carefully add the falafel balls to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes, turning occasionally, until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

                  Prepare the Salad:

                    - While the falafel is cooking, assemble the salad. In a large bowl, combine the mixed greens, cucumber, cherry tomatoes, red bell pepper, and red onion. Toss gently to mix.

                      Make the Tahini Dressing (if making homemade):

                        - In a bowl, combine tahini, lemon juice, olive oil, minced garlic, and a pinch of salt. Whisk until smooth, adding water a tablespoon at a time until you reach your desired consistency.

                          Assemble the Bowl:

                            - Divide the salad mixture among serving bowls. Top with crispy falafel, and if desired, sprinkle with crumbled feta cheese. Drizzle generously with tahini dressing.
