1 teaspoon onion powder

Olive oil spray or cooking spray

Prepare the Eggplant: Start by salting the eggplant slices. Arrange the rounds on a baking sheet in a single layer and sprinkle both sides with salt. Let them sit for about 30 minutes; this helps to draw out excess moisture and bitterness. Rinse and pat dry with paper towels.

    Set up the Breading Station: In three separate shallow dishes, prepare the breading. In the first, place the flour mixed with a pinch of salt and pepper. In the second, add the beaten eggs.
