Crispy Chickpea Tacos with Avocado Sauce

For the Crispy Chickpeas:

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon cumin

½ teaspoon chili powder

Salt and pepper, to taste

For the Avocado Sauce:

1 ripe avocado

1 lime, juiced

1/4 cup Greek yogurt (or plant-based yogurt)

1 clove garlic, minced

Salt and pepper, to taste

A pinch of cayenne pepper (optional, for heat)

For the Tacos:

8 small corn or flour tortillas

1 cup shredded red cabbage

1/2 cup chopped fresh cilantro

Lime wedges, for serving

Instructions
 

Prepare the Chickpeas:

    - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

      - Pat the chickpeas dry with a paper towel to reduce moisture. This will help them get crispy.

        - In a bowl, toss the chickpeas with olive oil, smoked paprika, garlic powder, cumin, chili powder, salt, and pepper until well coated.

          - Spread the seasoned chickpeas in a single layer on the prepared baking sheet.

            - Bake for 25-30 minutes, shaking the pan halfway through, until the chickpeas are golden and crispy.

              Make the Avocado Sauce:

                - While the chickpeas are baking, prepare the avocado sauce. In a blender or food processor, combine the ripe avocado, lime juice, Greek yogurt, minced garlic, salt, pepper, and cayenne pepper (if using).

                  - Blend until smooth and creamy. Adjust seasoning as needed. If the sauce is too thick, you can add a teaspoon of water to reach your desired consistency.

                    Assemble the Tacos:

                      - Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

                        - To assemble, spread a spoonful of the creamy avocado sauce onto each tortilla.

                          - Top with a generous amount of crispy chickpeas, followed by shredded red cabbage and fresh cilantro.

                            - Serve with lime wedges on the side for an extra zesty kick.
