1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper, to taste

4 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

Lemon wedges, for serving

Instructions
 

Crisp the Chickpeas: Preheat your oven to 400°F (200°C). On a baking sheet, toss the drained chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them in a single layer and roast for 20-25 minutes, stirring halfway through, until golden and crispy. Set aside to cool.

    Prepare the Salad Base: In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, Kalamata olives, and half of the feta cheese. Toss gently to combine.

      Add the Chickpeas: Once the chickpeas have cooled, add them to the salad mixture. Sprinkle with the remaining feta cheese and chopped parsley.
