For the Chicken Tenders:

1 lb (450g) chicken breast, cut into strips

1 cup buttermilk

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp salt

½ tsp black pepper

1 cup all-purpose flour

1 cup panko breadcrumbs

1 tsp dried oregano

1 tsp cayenne pepper (optional, for heat)

Oil, for frying (vegetable or canola)

For the Honey Mustard Dip:

½ cup mayonnaise

2 tbsp Dijon mustard

2 tbsp honey

1 tbsp apple cider vinegar

Salt and pepper to taste

Marinate the Chicken:

    - In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

      - Add the chicken strips to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes or up to 2 hours.

        Prep the Dredging Stations:

          - Set up two shallow dishes. In the first dish, add the flour. In the second dish, combine panko breadcrumbs, oregano, cayenne pepper, salt, and pepper.

            Coat the Chicken:

              - Remove the chicken from the marinade, letting excess drip off. Dredge each piece in flour, shaking off any excess. Then, dip again into the buttermilk and finally coat thoroughly with the panko breadcrumb mixture.

                Heat the Oil:

                  - In a deep skillet or frying pan, heat about ½ inch of oil over medium-high heat until it shimmers. You can test if it’s ready by dropping a breadcrumb in; it should sizzle immediately.

                    Fry the Chicken Tenders:

                      - Carefully place the coated chicken strips in the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary. Cook for about 4-5 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).
