1 tablespoon vegetable oil

1 onion, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1 red bell pepper, diced

1 cup water chestnuts, diced

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon chili paste (optional for heat)

Salt and pepper to taste

1 head of butter or romaine lettuce, leaves separated

Chopped green onions and sesame seeds for garnish

Cook the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Add the ground chicken and cook until browned, breaking it apart with a spatula (about 5-7 minutes).

    Sauté Aromatics: Add the chopped onion, garlic, and ginger to the skillet with the chicken. Sauté for 2-3 minutes until the onions are softened and fragrant.

      Add Vegetables: Stir in the diced red bell pepper and water chestnuts. Cook for an additional 2-3 minutes until the peppers start to soften.

        Flavor it Up: In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sesame oil, and chili paste (if using). Pour this sauce over the chicken mixture and stir to coat everything evenly. Season with salt and pepper to taste. Allow the mixture to cook for another 2-3 minutes to meld the flavors.
