Crispy Chicken Caesar Tortilla Pockets

2 large chicken breasts, boneless and skinless

1 cup buttermilk

1 cup breadcrumbs (preferably panko for extra crunch)

1 tsp garlic powder

1 tsp paprika

Salt and pepper, to taste

4 large tortillas (flour or whole wheat)

1 cup Romaine lettuce, chopped

½ cup cherry tomatoes, halved

½ cup Parmesan cheese, grated

½ cup Caesar dressing

Freshly squeezed lemon juice, for drizzling

Olive oil, for cooking

Marinate the Chicken: In a bowl, combine the buttermilk with garlic powder, paprika, salt, and pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and marinate in the refrigerator for at least 30 minutes, or overnight for best results.

    Prepare the Coating: In a shallow dish, spread out the breadcrumbs and season with a little more garlic powder, paprika, salt, and pepper. Mix well.

      Bread the Chicken: Once marinated, take the chicken breasts out of the buttermilk and let the excess drip off. Dredge each breast in the seasoned breadcrumbs, pressing gently to adhere the coating.

        Cook the Chicken: Heat a skillet over medium heat and add a splash of olive oil. Cook the breaded chicken for 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove from the skillet and let rest before slicing into strips.

          Assemble the Tortilla Pockets: Lay a tortilla flat on a clean surface.
