4 boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

4 slices of sourdough bread

1 cup shredded romaine lettuce

1/2 cup Caesar dressing

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 tablespoons olive oil

Freshly cracked black pepper, for garnish

Marinate the Chicken: In a bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Cover and marinate in the fridge for at least 30 minutes, or overnight for best flavor.

    Prep the Coating: In a separate shallow dish, mix the flour with a pinch of salt and pepper.

      Bread the Chicken: Remove the chicken from the marinade and let the excess drip off. Dredge each thigh in the seasoned flour, making sure they are evenly coated. Shake off any excess flour.

        Fry the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the breaded chicken thighs and cook for about 6-7 minutes on each side, or until golden brown and crispy. Ensure the internal temperature reaches 165°F (75°C). Remove from the skillet and let them rest on a paper towel to absorb excess oil.

          Prepare the Sandwiches: Preheat your broiler. Place the sourdough slices on a baking sheet. Spread a generous amount of Caesar dressing on each slice. Layer with crispy chicken, shredded romaine lettuce, a sprinkle of Parmesan cheese, and a generous amount of mozzarella cheese on top.

            Melt the Cheese: Place the sandwiches under the broiler for about 2-3 minutes, or until the cheese is bubbly and golden brown. Keep a close eye to prevent burning.
