Ingredients

2 medium zucchinis

1 cup shredded sharp cheddar cheese

1/2 cup all-purpose flour

1/2 cup breadcrumbs (panko preferred for extra crunch)

2 large eggs

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for drizzling

Fresh parsley or chives, chopped (for garnish)

Instructions

Prep the Zucchini: Preheat your oven to 425°F (220°C). Wash and trim the ends of the zucchinis. Use a vegetable peeler or julienne peeler to create long, thin strips of zucchini. Place the strips in a colander and sprinkle them lightly with salt. Let them sit for about 15 minutes to draw out excess moisture.

Prepare the Coating: In a shallow bowl, combine the flour, paprika, oregano, salt, and black pepper. In a second bowl, crack the eggs and whisk them until blended. In a third bowl, place the panko breadcrumbs and mix in the minced garlic and half of the cheddar cheese.

Coat the Zucchini: After 15 minutes, rinse the zucchini strings under cold water to remove the salt and pat them dry with paper towels. This step is crucial to avoid soggy strings.

Breading Process: Dip each zucchini string first into the flour mixture, ensuring it’s well coated. Then, coat it in the egg mixture, allowing any excess to drip off. Finally, dredge it in the breadcrumb mixture, pressing gently to adhere well.

Bake the Strings: Place a wire rack on a baking sheet lined with parchment paper. Arrange the coated zucchini strings in a single layer on the rack, making sure they don’t overlap for maximum crispiness. Spray or drizzle lightly with olive oil.

Bake to Perfection: Bake in the preheated oven for 15-20 minutes or until the zucchini strings are golden brown and crispy. You may want to flip them halfway through baking for even crisping.

Final Touches: Remove from the oven and sprinkle the remaining cheddar cheese on top while they are still hot. Let them cool for a few minutes.

Serve: Garnish with chopped fresh parsley or chives before serving. Enjoy these crispy cheddar garlic zucchini strings warm on their own or with your favorite dipping sauce!
