8 small corn tortillas

1 cup shredded aged cheddar cheese

1/2 cup prosciutto, thinly sliced

1/2 cup salami, thinly sliced

1/2 cup soppressata, thinly sliced

1/4 cup pickled jalapeños

1/2 cup olives (mixed varieties, sliced)

1/2 cup cherry tomatoes, halved

1 avocado, diced

Fresh cilantro leaves, for garnish

2 teaspoons olive oil

Salt and pepper, to taste

1/4 cup sour cream (for drizzling)

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tortillas: Lightly brush each corn tortilla with olive oil on both sides. This will help them crisp up when baking.

      Cheese Layer: Place about 2 tablespoons of shredded aged cheddar cheese on one half of each tortilla. Make sure to keep the cheese close to the edges to allow for easy folding.

        Add the Charcuterie: Layer the sliced prosciutto, salami, and soppressata over the cheese on each tortilla. You can mix and match or stick to your favorites.
