Crispy Baked Tofu Nuggets

1 block (14 oz) firm or extra-firm tofu, pressed and drained

1 cup panko breadcrumbs

1/2 cup all-purpose flour (or gluten-free flour for a GF option)

1/2 cup unsweetened plant-based milk (such as almond, soy, or oat)

2 tablespoons nutritional yeast (for a cheesy flavor)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for drizzling

Prepare the Tofu: Begin by pressing the tofu to remove excess moisture. Wrap it in a clean kitchen towel, place it on a plate, and set something heavy on top (like a cast-iron skillet) for 15-20 minutes. Once pressed, cut the tofu into bite-sized cubes or rectangles, about 1-inch thick.

    Set Up Your Breading Station: In three separate shallow bowls, prepare your breading stations.

      - In the first bowl, mix the all-purpose flour with garlic powder, onion powder, smoked paprika, salt, and black pepper.

        - In the second bowl, pour the plant-based milk.

          - In the third bowl, place the panko breadcrumbs and nutritional yeast. Stir to combine.

            Bread the Tofu: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy clean-up. Take each tofu piece and dip it into the flour mixture, shaking off any excess. Then, dip it into the plant-based milk, and finally coat it thoroughly in the panko breadcrumb mixture. Arrange the breaded tofu nuggets on the prepared baking sheet in a single layer, leaving some space between each nugget.

              Bake the Nuggets: Lightly spray or drizzle the tofu nuggets with cooking spray or olive oil to help them crisp up while baking. Place the baking sheet in the preheated oven and bake for 25-30 minutes, flipping the nuggets halfway through, until they are golden brown and crispy.
