12 lasagna noodles

1 block (8 oz) feta cheese

2 cups cherry tomatoes, halved

3 tbsp olive oil

2 cups fresh spinach

3 cloves garlic, minced

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper, to taste

1 cup marinara sauce

1 cup shredded mozzarella cheese

Fresh basil, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Lasagna Noodles: In a large pot of boiling salted water, cook the lasagna noodles according to package directions until al dente. Drain and lay them flat on a parchment-lined baking sheet to prevent sticking.

      Prepare the Filling: In a medium bowl, mix together the cherry tomatoes, feta cheese, olive oil, minced garlic, oregano, spinach, and red pepper flakes. Season with salt and pepper to taste. Gently combine until everything is well mixed.

        Fill the Noodles: Take a tablespoon of the filling and spread it along each noodle, then roll the noodles from one end to the other to form rolls. Place each roll seam-side down in a 9x13-inch (or similar-sized) baking dish.

          Add Marinara Sauce: Once all the rolls are in the dish, pour the marinara sauce evenly over the top of the rolls, making sure they are all well covered.

            Top with Mozzarella: Sprinkle the shredded mozzarella cheese generously over the marinara sauce, ensuring an even coverage.

              Bake: Cover the baking dish with aluminum foil (to prevent over-browning) and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
