2 large apples (Granny Smith or Honeycrisp), peeled and diced

1/4 cup granulated sugar

1 tsp ground cinnamon

1 tsp vanilla extract

1 tbsp lemon juice

1 tbsp cornstarch

1 package (2 sheets) refrigerated pie crusts (or homemade if preferred)

1 egg (for egg wash)

1 tbsp milk (for egg wash)

Turbinado sugar for sprinkling

Cooking spray or butter for greasing

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper or grease it with cooking spray or butter.

    Prepare the Apple Filling: In a medium bowl, combine the diced apples, granulated sugar, ground cinnamon, vanilla extract, lemon juice, and cornstarch. Mix well to ensure the apples are evenly coated and let it sit for about 10 minutes to allow the flavors to meld and juices to develop.

      Roll Out the Pie Crusts: On a lightly floured surface, roll out your pie crusts to smooth out any creases. Using a round cutter (about 4 inches in diameter), cut out circles of dough. You should aim for about 8 circles in total.

        Fill the Hand Pies: Place about 1-2 tablespoons of the apple filling in the center of each dough circle, being careful not to overfill.

          Seal the Hand Pies: Moisten the edges of each circle with water, then fold the dough over the filling to create a semi-circle. Press the edges together to seal and use a fork to crimp the edges for a decorative touch.

            Prepare for Baking: In a small bowl, whisk together the egg and milk to create an egg wash. Brush the tops of each hand pie with the egg wash and sprinkle a little Turbinado sugar on top for extra crunch and sweetness.
