Ingredients

2 medium zucchinis

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Cooking spray (or olive oil in a spray bottle)

Fresh parsley (for garnish, optional)

Marinara sauce or ranch dressing (for dipping, optional)

Instructions

Prep the Zucchini: Start by washing the zucchinis and cutting them into fry-shaped sticks, about ½ inch thick. Place in a colander, sprinkle with a little salt, and let them sit for about 15 minutes to draw out excess moisture. Pat dry with paper towels.

Set Up the Breading Station: Prepare three shallow bowls. In the first bowl, place the all-purpose flour. In the second bowl, whisk the eggs until smooth. In the third bowl, combine the breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper. Mix well to ensure the spices are evenly distributed.

Bread the Zucchini: Dip each zucchini stick into the flour, shaking off any excess, then into the egg mixture, and finally coat with the seasoned breadcrumbs. Press the breadcrumbs lightly to adhere well. Place the breaded zucchini on a plate in a single layer.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes, which will help achieve a perfectly crispy texture.

Air Fry the Zucchini: Spray the air fryer basket lightly with cooking spray. Place the breaded zucchini sticks in a single layer in the basket, ensuring they aren’t overcrowded (you may need to do this in batches). Spray the tops lightly with cooking spray.

Cook: Air fry the zucchini at 400°F (200°C) for 10-12 minutes, flipping halfway through, until they are golden brown and crispy. The exact time may vary based on your air fryer model, so keep an eye on them!

Garnish and Serve: Once cooked, remove the crispy zucchini fries from the air fryer and garnish with freshly chopped parsley if desired. Serve immediately with your choice of marinara sauce or ranch dressing for dipping.
