Creamy Tuscan Chicken with Spinach Rice

Ingredients
  

For the Creamy Tuscan Chicken:

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

2 cups fresh spinach

Fresh basil, for garnish

For the Spinach Rice:

1 cup long-grain rice

2 cups vegetable or chicken broth

1 tablespoon butter

2 cups fresh spinach, chopped

1 clove garlic, minced

Salt and pepper, to taste

¼ cup feta cheese (optional)

Instructions
 

Prepare the Spinach Rice:

    - Rinse the rice under cold water until the water runs clear.

      - In a medium saucepan, bring 2 cups of broth to a boil. Add the rinsed rice and a pinch of salt. Cover and reduce the heat to low. Cook for 15-18 minutes until the rice is tender and the broth is absorbed.

        - In a separate pan, melt 1 tablespoon of butter over medium heat. Sauté 1 minced clove of garlic until fragrant, about 1 minute. Add the chopped spinach and cook until wilted. Once the rice is cooked, fluff it with a fork and mix in the sautéed spinach. Season with salt, pepper, and feta cheese if desired. Set aside.

          Cook the Chicken:

            - Season the chicken breasts with salt and pepper on both sides.

              - In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side until golden brown and cooked through. Remove chicken from the skillet and set aside.

                Make the Creamy Sauce:

                  - In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant. Add the sun-dried tomatoes and cook for another minute.

                    - Pour in the heavy cream and chicken broth, stirring well. Add the Italian seasoning and bring to a light simmer. Stir in the grated Parmesan cheese until melted and smooth.

                      - Add the fresh spinach to the sauce and cook for 3-4 minutes until wilted.

                        Combine:

                          - Return the cooked chicken to the skillet, spooning the creamy sauce over the top. Let everything simmer together for 2-3 minutes to meld the flavors.

                            Serve:

                              - Plate the spinach rice and top with the creamy Tuscan chicken. Garnish with fresh basil leaves and additional Parmesan if desired.
