Creamy Tomato Spinach Skillet Pasta

12 oz (340 g) penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, diced

1 can (14 oz) diced tomatoes, with juices

2 cups fresh spinach, washed and chopped

1 cup heavy cream

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese, plus extra for serving

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water in case you need to thin the sauce later.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Tomatoes: Pour in the can of diced tomatoes (with their juices) and stir well. Allow to simmer for about 5 minutes, letting the flavors meld.

        Make It Creamy: Reduce the heat to low and pour in the heavy cream, stirring to combine. Add the Italian seasoning and red pepper flakes (if using). Season with salt and pepper to taste. Let it gently simmer for another 3-4 minutes, until the mixture has thickened slightly.

          Incorporate Spinach: Add the chopped spinach into the skillet and stir until it wilts down, about 2 minutes.
