Creamy Tomato Gnocchi Skillet

1 lb potato gnocchi

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (preferably fire-roasted)

1/2 cup heavy cream

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1/4 cup grated Parmesan cheese (plus extra for garnish)

2 cups fresh spinach

Fresh basil leaves for garnish

Cook the Gnocchi: In a large pot of boiling salted water, cook the gnocchi according to package instructions. Once they float to the top, they are done (about 2-3 minutes). Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

      Add Tomatoes and Spices: Pour in the diced tomatoes (with their juices) and add the dried basil, oregano, salt, and pepper. Stir well and let it simmer for 5 minutes to allow the flavors to meld.

        Make it Creamy: Reduce the heat to low and stir in the heavy cream. Let it simmer for another 2-3 minutes until the sauce is well combined and slightly thickened.

          Incorporate Gnocchi and Cheese: Gently fold in the cooked gnocchi and grated Parmesan cheese until everything is well-coated with the creamy tomato sauce. Stir to combine and heat through for about 2 minutes.

            Add Spinach: Toss in the fresh spinach and stir until it wilts, about 1-2 minutes. Adjust seasoning with more salt and pepper if necessary.
