4 large eggs

2 cups fresh spinach, chopped

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

1 clove garlic, minced

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant (about 30 seconds). Add the chopped spinach and cook until wilted (about 2-3 minutes). Season with salt and pepper.

    Prepare the Cream Mixture: In a bowl, whisk together the heavy cream and grated Parmesan cheese until smooth. Pour this mixture over the wilted spinach in the skillet, stirring gently to combine. Let it cook for another 2 minutes until slightly thickened.

      Cook the Eggs: Using a spoon, make four small wells in the creamy spinach mixture. Crack an egg into each well. Cover the skillet with a lid and allow the eggs to poach gently in the cream for about 5-7 minutes, or until the whites are set and the yolks are still runny (or to your desired doneness).

        Serve: Once the eggs are cooked to your liking, remove the skillet from heat. Garnish with chopped parsley. Serve immediately, either on its own or with some crusty bread on the side for dipping.
