8 oz penne pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 tablespoon olive oil

1 medium onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and bell peppers. Sauté for about 3-4 minutes until they start to soften. Add the minced garlic and cook for an additional minute until fragrant.
