Creamy Skillet Cheddar Rice & Broccoli

1 cup long-grain white rice

2 cups vegetable broth or chicken broth

2 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese

1 cup heavy cream

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Rice: In a medium saucepan, combine the rice and vegetable broth (or chicken broth). Bring to a boil over high heat, then reduce to low, cover, and let it simmer for about 15 minutes or until the rice is fully cooked and the liquid is absorbed. Remove from heat and fluff with a fork.

    Sauté the Broccoli: In a large skillet, heat the olive oil over medium heat. Add the broccoli florets and sauté for about 5 minutes until they start to turn bright green and tender. Remove the broccoli from the skillet and set it aside.

      Make the Creamy Sauce: In the same skillet, add the minced garlic and cook for about 1 minute until fragrant. Pour in the heavy cream and bring it to a simmer. Stir in the onion powder, garlic powder, salt, black pepper, and red pepper flakes (if using). Let the sauce simmer gently for 3-4 minutes to thicken slightly.

        Combine Ingredients: Lower the heat and stir in the cooked rice until it’s well-coated in the creamy sauce. Gradually add the shredded cheddar cheese, stirring until melted and creamy.

          Add Broccoli: Incorporate the sautéed broccoli back into the skillet and mix everything until well combined. Taste and adjust the seasoning if necessary.

            Garnish and Serve: Remove from heat and garnish with chopped fresh parsley. Serve immediately, either on its own or with a protein of your choice.
