2 large sweet potatoes, peeled and diced

2 medium apples (such as Granny Smith or Honeycrisp), cored and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup coconut milk (or heavy cream)

2 tablespoons olive oil

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

Salt and pepper to taste

Fresh thyme sprigs for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Roast Vegetable Mixture: In a large bowl, toss the diced sweet potatoes, diced apples, chopped onion, and minced garlic with olive oil, ground cinnamon, and nutmeg. Spread the mixture on a baking sheet in a single layer. Season with salt and pepper.

      Bake: Roast in the preheated oven for about 25-30 minutes, or until the sweet potatoes are tender and lightly caramelized. Stir halfway through for even roasting.

        Blend the Soup: Transfer the roasted mixture into a large pot. Add the vegetable broth and bring to a simmer over medium heat. Allow it to cook for another 5 minutes.

          Creamy Finish: Remove the pot from heat. Carefully blend the soup using an immersion blender until smooth. For a creamier texture, add in the coconut milk (or heavy cream) and blend until well combined.

            Adjust Seasoning: Taste the soup and adjust the seasoning with additional salt, pepper, or spices as desired.
