2 large red bell peppers

1 cup cream cheese, softened

1/2 cup sour cream

1/4 cup mayonnaise

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper (to taste)

1 tablespoon olive oil

Fresh parsley or chives, chopped for garnish

Tortilla chips or fresh veggie sticks for serving

Instructions
 

Roast the Peppers: Preheat your oven to 450°F (230°C). Place the red bell peppers on a baking sheet lined with parchment paper. Drizzle them with olive oil and roast in the oven for about 25-30 minutes, turning occasionally, until the skin is blistered and charred.

    Steam the Peppers: Once roasted, remove the peppers from the oven and place them in a bowl. Cover the bowl tightly with plastic wrap or a clean kitchen towel to allow the peppers to steam for about 10-15 minutes. This will make peeling them easier.

      Peel and Seed: After steaming, carefully peel off the charred skin of the peppers. Remove the stems and seeds, then chop the peppers into small pieces.

        Blend the Dip: In a food processor, combine the roasted red pepper pieces, softened cream cheese, sour cream, mayonnaise, minced garlic, smoked paprika, dried oregano, salt, and black pepper. Blend until the mixture is smooth and creamy, scraping down the sides as needed.

          Taste and Adjust: Give the dip a taste and adjust the seasoning as needed. If you prefer a spicier kick, feel free to add a pinch of cayenne pepper or a splash of hot sauce.
