Ingredients
  

1 head of garlic

12 oz (340 g) pasta (fettuccine or linguine work well)

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp red pepper flakes (optional for heat)

Fresh parsley, chopped (for garnish)

Extra Parmesan for serving

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off the head of garlic, drizzle with a little olive oil, and wrap it in aluminum foil. Roast in the oven for about 30-35 minutes until soft and caramelized. Let it cool, then squeeze the garlic cloves out of the skins into a bowl.

        Cook the Pasta:

          - While the garlic is roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water then drain the pasta.

            Make the Cream Sauce:

              - In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the roasted garlic, mashing it slightly with a fork or a spatula. Sauté for 1-2 minutes until fragrant.

                - Pour in the heavy cream, stirring to combine with the garlic, and bring it to a simmer. Cook for 3-4 minutes until slightly thickened.

                  Combine Pasta with Sauce:

                    - Gradually stir in the Parmesan cheese until melted and smooth. Season with salt, black pepper, and red pepper flakes (if using). If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired consistency.

                      Toss and Serve:

                        - Add the drained pasta to the skillet and toss well to coat the pasta in the creamy sauce. If needed, add more reserved pasta water to help the sauce adhere.

                          - Serve hot, garnished with fresh parsley and extra Parmesan cheese to taste.
