1 cup orzo pasta

1 bulb of garlic

2 tablespoons olive oil

4 cups vegetable broth (or chicken broth)

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon dried thyme

Salt and pepper to taste

Chopped fresh parsley for garnish

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the bulb of garlic to expose the cloves and drizzle with 1 tablespoon of olive oil. Wrap it in foil and roast for about 30-35 minutes, until the cloves are soft and golden. Once done, let it cool slightly, then squeeze the cloves out of their skins into a bowl and mash into a paste.

    Cook the Orzo: In a large saucepan, bring the vegetable or chicken broth to a boil. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally.

      Add Cream and Cheese: Once the orzo is cooked, reduce the heat to low. Stir in the heavy cream, mashed roasted garlic, and Parmesan cheese until everything is well combined and creamy. Season with dried thyme, salt, and pepper to taste.
