Ingredients

1 cup fresh raspberries (plus extra for topping)

1 cup coconut milk (or any plant-based milk of your choice)

1/4 cup chia seeds

2 tablespoons pure maple syrup (or honey, if not vegan)

1 teaspoon vanilla extract

1/2 cup granola (your favorite blend)

1 tablespoon lemon juice

Fresh mint leaves (optional, for garnish)

Instructions

Prepare the Chia Seed Mixture: In a medium bowl, combine the coconut milk, chia seeds, maple syrup, vanilla extract, and lemon juice. Whisk thoroughly until well blended. Let the mixture sit for about 10-15 minutes, allowing the chia seeds to absorb the liquid and thicken.

Blend the Raspberry Layer: In a blender, add the fresh raspberries and blend until smooth. If desired, you can strain the mixture to remove the seeds for a smoother texture.

Layer the Parfaits: Once the chia seed mixture has thickened, take a clear glass or jar and start layering the parfait. First, add a layer of the chia seed mixture, followed by a layer of blended raspberries. Repeat the layers until the glasses are filled, finishing with the raspberry layer on top.

Add the Crunch: Sprinkle a generous layer of granola on top of the parfaits for added texture and crunch. You can also add a few whole raspberries for a beautiful presentation.

Chill and Serve: Let the parfaits sit in the refrigerator for at least 30 minutes to meld the flavors. When ready to serve, garnish with fresh mint leaves for a pop of color and freshness.
