1 cup coconut milk (or almond milk)

1 teaspoon vanilla extract

1/2 cup Greek yogurt (or dairy-free yogurt)

1/2 cup granola (your choice)

Mint leaves for garnish (optional)

Prepare the Chia Pudding: In a mixing bowl, combine the coconut milk, chia seeds, honey or maple syrup, and vanilla extract. Whisk thoroughly until well combined.
