12 oz cheese tortellini (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup baby spinach leaves

½ cup fresh mozzarella balls, halved

¼ cup red onion, thinly sliced

½ cup homemade or store-bought pesto

½ cup heavy cream

2 tbsp olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for topping

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
