Ingredients
  

1 pound potato gnocchi (store-bought or homemade)

1 cup heavy cream

1 cup basil pesto (homemade or store-bought)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cups fresh spinach leaves

1 cup cherry tomatoes, halved

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Gnocchi: In a large pot, bring salted water to a boil. Add the gnocchi and cook according to package instructions (typically until they float to the surface, about 2-3 minutes). Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Toss in the fresh spinach and cherry tomatoes, cooking until the spinach wilts slightly (about 2-3 minutes). Season with salt and pepper.

        Combine Cream and Pesto: In a mixing bowl, whisk together the heavy cream and pesto until well combined.

          Mix Everything Together: In the skillet with the vegetables, add the cooked gnocchi, followed by the creamy pesto mixture. Stir gently to combine all ingredients, making sure the gnocchi is coated evenly.

            Transfer to Baking Dish: Pour the gnocchi mixture into a greased 9x13 inch (or similar) baking dish. Spread it evenly.

              Add Cheese Topping: Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese has melted and bubbly, and the top is golden brown.
