8 oz (225g) pasta of choice (fettuccine, penne, or spaghetti)

2 cups fresh spinach, roughly chopped

1 cup heavy cream

1 lemon (zest and juice)

1 tablespoon olive oil

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Optional: crushed red pepper flakes for heat

Fresh basil or parsley for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Make the Cream Sauce: Pour in the heavy cream and stir in the lemon zest and lemon juice. Bring the mixture to a gentle simmer, allowing it to thicken slightly for about 2-3 minutes.

        Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

          Combine Pasta and Sauce: Add the drained pasta to the skillet, mixing it well with the creamy spinach sauce. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is reached.
