8 oz. spaghetti or any pasta of choice

2 cups fresh kale, stems removed and chopped

1 cup heavy cream

1 medium lemon (zest and juice)

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs (preferably panko)

2 tbsp olive oil

2 tbsp unsalted butter

Salt and freshly cracked black pepper to taste

Optional: Red pepper flakes for heat

Fresh parsley or basil for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.

    Sauté the Kale: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant. Add the chopped kale and cook for 3-4 minutes until wilted. Season with a pinch of salt and pepper.
