Creamy Lemon Artichoke Pasta

12 oz fettuccine or linguine pasta

1 can (14 oz) artichoke hearts, drained and chopped

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

Zest and juice of 1 large lemon

½ cup grated Parmesan cheese

Salt and pepper to taste

1 cup fresh spinach, roughly chopped

¼ cup fresh basil leaves, chopped (optional)

Extra lemon slices for garnish (optional)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or linguine according to package instructions until al dente. Reserve ¾ cup of pasta water, then drain the pasta and set it aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds, or until fragrant. Be careful not to burn the garlic.

      Add Artichokes: Stir in the chopped artichoke hearts and cook for an additional 2 minutes, allowing them to warm through and absorb the garlic flavor.

        Make the Cream Sauce: Reduce the heat to low, then add the heavy cream, lemon zest, and lemon juice to the skillet. Stir to combine, then let it simmer for 3-4 minutes, allowing the sauce to slightly thicken.

          Incorporate Pasta and Cheese: Gradually add the cooked pasta to the sauce, tossing gently to coat. Incorporate the grated Parmesan cheese, mixing well. If the sauce is too thick, add a bit of the reserved pasta water to achieve the desired creaminess.

            Add Spinach and Season: Fold in the chopped spinach and season the pasta with salt and pepper to taste. Continue to cook for another 2-3 minutes, just until the spinach wilts.
