Ingredients

8 oz. mini pasta shells

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

2-3 fresh jalapeños, deseeded and finely chopped (adjust for heat preference)

1 cup cream cheese, softened

1/2 cup sour cream

1 cup grated sharp cheddar cheese

1/2 cup grated Parmesan cheese

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup fresh cilantro, chopped (for garnish)

Bread crumbs (for topping)

Instructions

Cook the Pasta:

    - In a large pot, bring salted water to a boil and cook the mini pasta shells according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables:

        - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent. Add the minced garlic and chopped jalapeños, cooking for another 2-3 minutes until fragrant.

          Make the Creamy Sauce:

            - Reduce the heat to low and add the softened cream cheese and sour cream into the skillet. Stir until the mixture is creamy and well combined. Gradually add the sharp cheddar cheese and Parmesan cheese, stirring continuously until melted and smooth.

              Season the Mixture:

                - Sprinkle in the smoked paprika, garlic powder, salt, and black pepper. Mix well to combine all the flavors. If needed, adjust seasoning to taste.

                  Combine Pasta and Sauce:

                    - Fold the cooked pasta shells into the creamy jalapeño mixture, ensuring each shell is thoroughly coated with the sauce. If the mixture seems too thick, you can add a splash of pasta cooking water to reach your desired consistency.

                      Prepare for Baking:

                        - Preheat your oven to 375°F (190°C). Lightly grease a baking dish. Using a spoon or small cookie scoop, fill each mini pasta shell with the creamy jalapeño filling. Place them in the prepared baking dish.

                          Top and Bake:

                            - Sprinkle a generous amount of bread crumbs over the filled pasta shells for a crunchy topping. Optionally, you can add a little extra grated cheese for added flavor. Bake in the preheated oven for about 20-25 minutes, or until the top is golden brown and bubbling.

                              Garnish and Serve:

                                - Remove from the oven and let cool for a few minutes. Garnish with chopped fresh cilantro before serving.

                                  Prep Time, Total Time, Servings:
