4 medium zucchini (zoodles)

1 cup heavy cream

1 cup grated Parmesan cheese

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional, for a spicy kick)

2 tablespoons fresh parsley, chopped (for garnish)

Prepare Zoodles: Using a spiralizer, create zucchini noodles from the 4 zucchini. If you don’t have a spiralizer, you can also use a vegetable peeler for wider strips. Set the zoodles aside on a clean paper towel to remove excess moisture.

    Sauté Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant, stirring often to prevent burning.

      Make Creamy Base: Reduce the heat to low, and pour in the heavy cream. Stir to combine with the garlic, then sprinkle in the Parmesan cheese, salt, black pepper, and red pepper flakes if using. Continuously stir until the cheese has melted and the sauce becomes creamy.

        Add Zoodles: Increase the heat back to medium and add the zoodles to the skillet. Toss well to coat the zoodles in the creamy garlic Parmesan sauce. Cook for about 2-4 minutes, or until the zoodles are tender but still al dente, stirring occasionally. Be careful not to overcook them; you want them to maintain a bit of crunch.

          Serve: Remove from heat and garnish with fresh parsley. Plate immediately and serve warm.
