1.5 pounds boneless, skinless chicken thighs or breasts

1 cup long-grain white rice, rinsed

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese, plus more for garnish

5 cloves garlic, minced

1 medium onion, finely chopped

1 cup frozen peas (optional)

1 tablespoon olive oil

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sear the Chicken: In a large oven-safe skillet or Dutch oven, heat olive oil over medium-high heat. Season the chicken thighs or breasts with salt, pepper, and Italian herbs. Add the chicken to the hot skillet and sear for about 4-5 minutes per side until golden brown. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until fragrant and the onions are translucent.

        Combine Ingredients: To the skillet, add the rinsed rice, chicken broth, heavy cream, and grated Parmesan cheese. Stir well to combine, scraping up any brown bits from the bottom of the skillet.

          Nestle the Chicken: Return the seared chicken to the skillet, nestling it into the rice mixture. If you’re using peas, sprinkle them over the top at this stage.
