Ingredients

1 medium head of cauliflower, cut into florets

4 cloves garlic, peeled

1/4 cup unsweetened almond milk or regular milk (for creaminess)

3 tablespoons unsalted butter or olive oil (for vegan option)

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 teaspoon garlic powder (optional, for extra garlic flavor)

Fresh chives or parsley, chopped (for garnish)

Optional: 1/4 cup grated Parmesan cheese (omit for vegan option)

Instructions

Prepare the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and garlic cloves, and cook for about 10-12 minutes or until the cauliflower is tender and easily pierced with a fork.

Drain and Steam Dry: Drain the cauliflower and garlic, then return them to the pot. Allow them to sit for a minute or two with the lid on to let any remaining moisture evaporate.

Mash the Mixture: Add the almond milk (or regular milk), butter (or olive oil), salt, pepper, and garlic powder (if using) to the pot with the cauliflower and garlic. Using a potato masher, fork, or immersion blender, mash until smooth and creamy. Adjust dairy and butter according to desired creaminess.

Add Extra Flavor: Stir in the Parmesan cheese if you’re not following a vegan diet, and mix until melted and fully integrated. Taste and adjust seasonings if necessary.

Serve: Transfer the creamy mashed cauliflower to a serving dish. Garnish with freshly chopped chives or parsley for a pop of color. Enjoy as a low-carb alternative to traditional mashed potatoes!
