Ingredients

1 cup Greek yogurt

1 medium cucumber, grated and excess water squeezed out

2 tablespoons fresh dill, finely chopped

1 tablespoon lemon juice

1 clove garlic, minced

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

1 tablespoon olive oil (optional, for extra creaminess)

Instructions

In a medium mixing bowl, add the Greek yogurt and mix until smooth.

Grate the cucumber using a box grater or food processor, then place the grated cucumber in a clean kitchen towel or cheesecloth. Squeeze out excess moisture to prevent the dip from becoming watery.

Add the grated cucumber to the yogurt, along with the chopped dill, lemon juice, minced garlic, salt, and black pepper. If desired, add the olive oil for added creaminess.

Stir all the ingredients together until well combined. Adjust seasoning if necessary, adding more salt, pepper, or lemon juice as preferred.

Cover and refrigerate for at least 30 minutes to allow the flavors to meld. For the best taste, let it chill for a few hours.

Serve chilled with pita chips, fresh veggies, or use as a spread on sandwiches and wraps.
