2 large cucumbers, peeled and roughly chopped

2 ripe avocados, halved and pitted

1 cup Greek yogurt (or dairy-free yogurt for a vegan option)

1 cup vegetable broth, chilled

2 tablespoons fresh lime juice

2 tablespoons fresh dill, chopped (plus more for garnish)

1 garlic clove, minced

Salt and pepper to taste

Sliced radishes and cucumber ribbons for garnish (optional)

Instructions
 

In a blender or food processor, combine the chopped cucumbers, avocados, Greek yogurt, chilled vegetable broth, lime juice, dill, and minced garlic.

    Blend on high until the mixture is creamy and smooth. If the soup is too thick, you can add more vegetable broth to reach your desired consistency.

      Taste the soup and season with salt and pepper as needed. Blend again to incorporate the seasoning.

        Once blended, chill the soup in the refrigerator for at least 30 minutes to allow the flavors to meld.
