Creamy Chicken Taco Casserole

2 cups cooked chicken, shredded or diced

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 packet taco seasoning

1 can (10 oz) diced tomatoes with green chilies

1 cup sour cream

1 cup cream of chicken soup (or use a homemade version)

2 cups shredded cheddar cheese

1 cup crushed tortilla chips (plus extra for topping)

2 green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish)

Jalapeños (sliced, optional, for heat)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Mix the Filling: In a large mixing bowl, combine the cooked chicken, black beans, corn, taco seasoning, diced tomatoes with green chilies, sour cream, and cream of chicken soup. Stir until everything is well incorporated.

      Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the crushed tortilla chips evenly on the bottom. Pour half of the chicken mixture over the chips. Sprinkle with 1 cup of shredded cheddar cheese. Repeat the layers with the remaining tortilla chips, chicken mixture, and top with the remaining cheese.

        Bake: Cover the casserole with aluminum foil and bake in the preheated oven for about 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

          Garnish and Serve: Once out of the oven, let the casserole cool for a few minutes. Garnish with sliced green onions, chopped cilantro, and jalapeños if desired. Serve warm with additional tortilla chips or a side salad.
